A wholesome and delicious Mixed Berry Oatmeal bake featuring rolled oats, fresh berries, and warm spices, perfect for a nutritious breakfast or snack. This baked oatmeal is naturally sweetened with maple syrup and combined with almond milk for a dairy-free option.

Ingredients

Wet Ingredients

  • 2 eggs
  • 1/4 cup maple syrup
  • 2 tablespoons oil (olive oil or avocado oil)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond milk

Dry Ingredients

  • 2 1/2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Fruits

  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries

Instructions

  1. Preheat Oven and Prepare Berries: Preheat your oven to 375°F (190°C). Slice the strawberries into bite-sized pieces or thin slices to ensure even distribution throughout the oatmeal bake.
  2. Mix Wet Ingredients: In a large mixing bowl, beat the eggs thoroughly with the maple syrup, olive or avocado oil, vanilla extract, baking powder, cinnamon, and salt until well combined and smooth.
  3. Add Oats: Stir the rolled oats into the wet mixture until the oats are evenly coated and the batter starts to thicken.
  4. Incorporate Almond Milk: Pour in the almond milk and mix thoroughly to combine it completely with the oats and other ingredients. This creates a moist batter base for the oatmeal.
  5. Fold in Berries: Gently fold in the sliced strawberries, blueberries, and raspberries to distribute the fruit evenly without crushing them.
  6. Prepare Baking Dish and Bake: Lightly coat an 8×8 or 9×9-inch baking dish with cooking spray or line it with parchment paper. Pour the oatmeal mixture into the dish and gently pat it down to evenly spread and flatten the batter surface. Bake in the preheated oven for 30 to 35 minutes, or until the center is set and the top is slightly golden.
  7. Cool and Serve: Remove the baking dish from the oven and allow the baked oatmeal to cool for about 5 minutes before slicing into portions. Serve warm for a comforting breakfast or snack.

Notes

  • You can substitute the almond milk for any other milk your preference such as dairy milk or oat milk.
  • Use fresh or frozen berries; if using frozen, thaw and drain excess liquid before folding in.
  • For added texture, sprinkle chopped nuts or seeds on top before baking.
  • This baked oatmeal keeps well refrigerated for up to 4 days and can be reheated in the microwave.
  • Feel free to adjust the sweetness by modifying the amount of maple syrup to taste.
