Ingredients

Base Layer

  • 1 box Club Crackers (you will not use the entire box)

Filling

  • 1 cup salted butter (2 sticks)
  • 1 cup brown sugar
  • 2 cups graham cracker crumbs
  • 1/2 cup milk
  • 1/3 cup granulated sugar
  • 1/2 cup butter

Topping

  • 1/2 cup butter (1 stick)
  • 1/2 cup chocolate chips
  • 2/3 cup peanut butter

Instructions

  1. Prepare the base: Line the bottom of a 9×13 inch baking pan with a single layer of Club Crackers, arranging them to cover the entire base evenly.
  2. Make the filling: In a small saucepan, melt 2 sticks of salted butter over medium heat. Stir in the brown sugar, granulated sugar, graham cracker crumbs, and milk, mixing until the ingredients are fully incorporated and smooth.
  3. Assemble layers: Spread half of the filling mixture evenly over the base layer of crackers. Then add another layer of Club Crackers on top, followed by spreading the remaining half of the filling over this second cracker layer. Finally, place a last layer of crackers on top.
  4. Prepare the topping: In a separate small saucepan, melt together 1/2 cup butter, chocolate chips, and peanut butter over low heat until smooth and well combined. Pour this chocolate peanut butter mixture evenly over the top layer of crackers and spread to cover completely.
  5. Chill to set: Refrigerate the assembled bars for at least 4 hours, or until firm and set. Once chilled, cut into 24 bars and serve.
