Delicious and fluffy oat flour pancakes made with simple wholesome ingredients. Perfect for a quick and nutritious breakfast, these pancakes are easy to prepare using either old fashioned oats or oat flour, blended or whisked to a smooth batter. They are naturally gluten-free when using certified oat flour and can easily be made vegan by using dairy-free milk.

Ingredients

Dry Ingredients

  • 1 ½ cups old fashioned oats (or 1 cup + 2 tablespoons oat flour)
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Wet Ingredients

  • 1 cup milk (dairy-free for vegan option)
  • 1 teaspoon vanilla extract

Optional Mix-ins

  • Chocolate chips, blueberries, or other preferred mix-ins

Instructions

  1. Preheat the cooking surface: Heat a griddle or large skillet over medium-high heat until hot and ready for cooking your pancakes.
  2. Prepare batter with oats: If using old fashioned oats, combine all ingredients except mix-ins in a blender. Blend on high for about 2 minutes, scrape the sides, then blend for another minute until mostly smooth with very few lumps. The batter may still have some graininess from the oats, which is normal.
  3. Prepare batter with oat flour: If using oat flour, you can either blend all ingredients as above or whisk everything together in a bowl until well combined and smooth.
  4. Cook the pancakes: Using a ⅓ cup scoop, pour batter onto the hot griddle. If desired, sprinkle chosen mix-ins on top of the batter immediately. Cook for about 3 minutes until bubbles form across the surface and the edges look set, then flip and cook for another 3 to 4 minutes until golden brown and cooked through.
  5. Serve: Remove pancakes from the griddle and serve hot with maple syrup and your favorite pancake toppings. Enjoy!
