Ingredients

Pancakes:

  • 2 cups oats

Caramelized Apples:

  • 4-5 tablespoons sugar
  • ¼ teaspoon cinnamon
  • ½ cup walnuts, toasted
  • 1 cup maple syrup

Instructions

  1. Prepare pancake batter: In a large bowl, combine oats, buttermilk, flour, brown sugar, baking soda, baking powder, cinnamon, and nutmeg. Let the mixture sit for about 10 minutes to allow the oats to soften.
  2. Add eggs and butter: Stir in the lightly beaten eggs and the melted butter until the batter is smooth and well combined.
  3. Cook pancakes: Heat a skillet or griddle over medium heat and brush with melted butter. Pour about ¼ cup of batter per pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and edges are set, then flip and cook another 2 minutes until golden brown. Repeat until all batter is used, keeping pancakes warm.
  4. Caramelize apples: In a large pan, melt ½ cup butter over medium heat. Add the sliced apples, sugar, water, and cinnamon. Cook gently, stirring occasionally, for about 10 minutes until apples are tender and caramelized.
  5. Toast walnuts: While apples are cooking, toast walnuts in a dry pan over medium heat for 3-5 minutes until fragrant and lightly browned. Remove from heat and set aside.
  6. Serve: Stack pancakes on plates, spoon the caramelized apples over the top, sprinkle with toasted walnuts, and drizzle generously with maple syrup. Serve warm and enjoy!
