Ingredients

  • 2-3 cups cherry tomatoes
  • 4 cloves garlic, chopped
  • 1 shallot, chopped
  • 1/3 cup fresh basil, chopped (plus extra for garnish)
  • 2-3 tablespoons sliced peperoncinis

  • 3 tablespoons extra virgin olive oil
  • 1 pound dry orzo pasta
  • 1 (8 ounce) jar basil pesto
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Preheat Oven and Roast Tomatoes: Preheat your oven to 400° F (200° C). In a 9×13 inch baking dish, combine the cherry tomatoes, olive oil, chopped garlic, chopped shallot, fresh basil, chili flakes, kosher salt, and black pepper. Spread evenly and roast in the preheated oven for 10 minutes to soften and develop flavor.
  2. Add Orzo and Pesto: Remove the baking dish from the oven and carefully add the dry orzo pasta, basil pesto, and sliced peperoncinis to the roasted tomatoes. Pour 2 1/2 cups of water over the mixture and stir everything together to combine.
  3. Bake Orzo Mixture: Return the baking dish to the oven and bake uncovered for 12-15 minutes. Cook until most of the water is absorbed by the orzo but not completely dry, ensuring the pasta is tender and saucy.
  4. Add Cheese and Final Bake: Stir the orzo gently, then evenly sprinkle shredded mozzarella cheese on top. Return the dish to the oven and bake for another 10 minutes or until the cheese is melted, bubbly, and slightly golden.
