  • 1 (10-ounce) can diced tomatoes with or without chiles (like Rotel), undrained
  • 1/2 cup milk or heavy cream
  • 8 ounces dry pasta (such as rotini, penne, or farfalle)
  • Salt and pepper, to taste

Cheese and Garnish

  • 1 cup shredded Cheddar-Jack cheese
  • 1/3 cup sliced scallions (for garnish)

Instructions

  1. Sauté Onions and Sausage: Heat 1 tablespoon of extra virgin olive oil in a 5-quart sauté pan over medium-high heat. Add the diced onions and sliced smoked turkey sausage. Cook them until the onions are translucent and the sausage is lightly browned, about 5-7 minutes. Then add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  2. Add Liquids, Pasta, and Seasonings: Pour in 2 cups of chicken broth, the undrained can of diced tomatoes, 1/2 cup milk or heavy cream, 8 ounces of dry pasta, and season with salt and pepper to taste. Stir everything together well to combine the ingredients evenly.
  3. Simmer Until Pasta is Tender: Bring the mixture to a boil. Once boiling, cover the pan and reduce the heat to low. Allow the pasta to simmer gently for about 15 minutes, or until the pasta is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  4. Melt Cheese and Garnish: Turn off the heat and stir in 1/2 cup of shredded Cheddar-Jack cheese into the pasta mixture. Then sprinkle the remaining 1/2 cup of cheese over the top. Cover again and let it sit for about five minutes to allow the cheese to melt thoroughly. Optionally, you can place the pan under the broiler for a couple of minutes to melt and slightly brown the cheese before serving.
  5. Serve: Finally, garnish with 1/3 cup sliced scallions and serve immediately while hot and cheesy.
