  • ¾ cup nonfat milk (or milk of choice; tested with dairy milk and plain, unsweetened oat milk)
  • ¼ cup creamy peanut butter
  • ½ teaspoon vanilla extract
  • 1/16 teaspoon kosher salt

  • 1 tablespoon chia seeds (optional)

Oats and Toppings

  • 1 cup old-fashioned (rolled) oats (NOT quick oats)
  • 4½ tablespoons coarsely crushed, salted peanuts
  • Optional toppings: banana slices, drizzled or dolloped peanut butter, extra nuts, or mini chocolate chips

Instructions

  1. Mix Wet Ingredients: Whisk together mashed banana, milk, peanut butter, vanilla, kosher salt, and if you choose, the optional chia seeds until the mixture is smooth and well combined.
  2. Add Oats: Stir the old-fashioned rolled oats into the wet mixture thoroughly, ensuring all oats are coated.
  3. Refrigerate: Cover the container and refrigerate for at least 2 hours, ideally overnight, allowing the oats to soak and absorb the flavors fully.
  4. Serve: Before eating, stir the oats if they have developed a brown layer on top from banana oxidation—it won’t affect the taste. Sprinkle with crushed peanuts and add any optional toppings like banana slices, extra peanut butter, nuts, or mini chocolate chips just before serving to keep toppings fresh and crunchy.

Notes

  • Use old-fashioned rolled oats for the best texture; quick oats can become too mushy.
