Delicious and easy pancake roll-ups perfect for breakfast or brunch. These thin, crepe-like pancakes are filled with your favorite spreads such as Nutella, peanut butter, or lemon curd, then rolled up and served with toppings like powdered sugar, whipped cream, and syrup for a fun and tasty treat.

Ingredients

Pancake Batter

  • 1 1/2 cups (177g) all purpose flour (gluten-free if needed)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup (25g) granulated sugar
  • 2 1/4 cups (650ml) milk
  • 3 Tablespoons (42g) unsalted butter, melted and cooled slightly
  • 1 egg

Toppings and Fillings

  • Powdered sugar (for dusting)
  • Syrup (for serving)
  • Whipped cream (for serving)
  • Nutella, lemon curd, peanut butter, cream cheese, strawberries, etc. (optional fillings)

Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  2. Add wet ingredients: Pour in the melted butter, egg, and milk. Whisk the mixture until smooth and free of lumps, being careful not to over-mix to keep the batter light.
  3. Cook the pancakes: Spray a small frying pan with cooking spray and heat it over medium-high. Pour about 1/4 cup of batter into the pan, swirling the pan handle to spread the batter evenly to cover the bottom. Cook for around 2 minutes until the bottom is golden brown, then flip and cook the other side for about 1 minute. Transfer the cooked pancake to a plate. Repeat until all batter is used.
  4. Assemble roll-ups: While the pancakes are still warm, spread with butter and dust with powdered sugar. Add your preferred filling such as peanut butter, Nutella, or cream cheese with strawberries. Roll up each pancake from one end to the other.
  5. Serve: Arrange the roll-ups on a serving plate and accompany them with whipped cream and syrup for dipping or drizzling. Enjoy immediately while warm.
