These Parmesan French Fries are a delicious twist on the classic, featuring crispy russet potato wedges air fried to perfection and tossed with savory truffle oil, garlic, and herbs, then finished with a sprinkle of grated Parmesan cheese. This recipe offers three cooking methods, with the primary one being air frying for a healthier, crispy result with less oil.

Ingredients

Potatoes

  • 3 medium russet potatoes

Seasoning & Coating

  • 2 tbsp truffle oil
  • 1 tsp garlic powder
  • 2 tbsp truffle seasoning (or substitute with paprika and herbs)
  • 1/2 tsp dried thyme (optional)
  • 1/2 tsp dried oregano (optional)

Finishing

  • 2 tbsp grated Parmesan cheese

Instructions

  1. Preheat the air fryer: Set your air fryer to 400°F (200°C) and allow it to preheat for 3-5 minutes to ensure even cooking.
  2. Prepare the potatoes: Wash and scrub the russet potatoes thoroughly, leaving the skin on for added texture and nutrients. Cut each potato lengthwise into thick wedges approximately 1/2 to 3/4 inch thick.
  3. Season the potato wedges: In a large bowl, toss the wedges with truffle oil until evenly coated. Add garlic powder, truffle seasoning, dried thyme, and dried oregano. Toss again to distribute the spices evenly over the potatoes.
  4. Air fry the wedges: Arrange the seasoned potato wedges in a single layer in the air fryer basket without overlapping. Cook at 400°F (200°C) for 18-20 minutes, shaking the basket halfway through to ensure even crisping. Check for doneness and add 2-3 minutes more if needed for desired crispiness.
  5. Finish and serve: Remove the fries from the air fryer and transfer them to a serving plate. Sprinkle grated Parmesan cheese over the fries. Serve hot with your favorite dipping sauce or as a side to your meal.

Notes

  • You can substitute truffle seasoning with a mix of paprika, garlic powder, and herbs if unavailable.
  • Cutting the potatoes into similar-sized wedges ensures even cooking.
  • Do not overcrowd the air fryer basket; cook in batches if necessary for optimal crispiness.
  • Leaving the potato skins on adds flavor and texture, as well as extra nutrients.
