This Passion Fruit Posset is a luscious, creamy dessert made with just four simple ingredients. Combining the richness of heavy cream with the tangy sweetness of passion fruit and lemon zest, this no-fuss posset is silky smooth and perfect for a refreshing treat. With minimal cooking involved and a quick chilling time, it’s an elegant dessert that comes together in under 10 minutes plus chilling time.

Ingredients

Posset Base

  • 2 cups (480 ml) Heavy Cream
  • 2/3 cup (133 g) Granulated Sugar
  • 2 tablespoons Lemon Zest (from two lemons)
  • 6 tablespoons (90 g) Passion Fruit Puree (from about 4 passion fruits)

For Garnish

  • Passion Fruit Pulp

Instructions

  1. Prepare Equipment: Grab a 2-cup measuring cup and 6 small ramekins or dessert cups. Set them aside for easy access during the cooking process.
  2. Heat Cream Mixture: In a medium saucepan, combine the heavy cream, granulated sugar, and lemon zest. Over medium heat, bring the mixture to a boil, then reduce to a simmer. Stir frequently to prevent scorching and allow it to simmer for about 6 minutes until the liquid reduces to exactly 2 cups. Use the 2-cup measuring cup intermittently to check volume and ensure precise reduction.
  3. Add Passion Fruit Puree: Once the mixture has reduced, pour it into the measuring cup and stir in the passion fruit puree thoroughly to combine the flavors evenly.
  4. Strain and Pour: Strain the mixture through a fine mesh sieve into a bowl to achieve an ultra-smooth texture free of zest and pulp residue. Then, evenly divide the posset mixture among the prepared ramekins.
  5. Chill to Set: Place the ramekins in the fridge and chill for at least 3 hours, preferably overnight, allowing the posset to fully set and firm up.
  6. Serve and Garnish: Just before serving, top each posset with fresh passion fruit pulp for a burst of texture and tangy flavor. Enjoy this creamy, refreshing dessert.

Notes

  • Be sure to reduce the cream mixture accurately to 2 cups for the perfect set; under or over reduction can affect texture.
  • Using fresh passion fruit puree gives the best flavor; canned puree may alter the taste and texture.
  • This dessert can be made a day ahead, making it ideal for entertaining or meal prep.
  • For a smoother zest infusion, fine grate the lemon zest avoiding the bitter white pith.
  • Ramekins or small glasses work well for serving—a portion size of about 1/2 cup per serving is ideal.
