A refreshing and elegant Peach Burrata Salad combining juicy heirloom tomatoes, ripe peaches, creamy burrata, and a vibrant mix of fresh basil, olive oil, and balsamic glaze. This easy-to-prepare salad pairs perfectly with warm toasted crusty bread for a delightful summer appetizer or light meal.

Ingredients

Salad

  • 2 large tomatoes (heirloom, beefsteak, etc.)
  • 3 large peaches (ripe)
  • 1 cup cherry tomatoes (cut in halves or quarters)
  • 8 oz Burrata (drained)
  • 1/2 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • 2 tablespoons fresh basil (cut into strips)

Bread

  • 1 loaf crusty bread (toasted)

Instructions

  1. Slice the tomatoes and peaches: Using a sharp knife, carefully slice the large tomatoes and ripe peaches into 1/4 inch thick slices to ensure even layering and a balanced texture in the salad.
  2. Arrange the tomatoes: Lay the sliced tomatoes neatly on a large serving plate or platter as the base layer for this salad.
  3. Add the peaches and cherry tomatoes: Place the peach slices on top of the tomatoes, followed by the halved or quartered cherry tomatoes, distributing them evenly.
  4. Place the burrata: Position the whole burrata cheese ball in the center of the arranged peaches and tomatoes. You may break it open now or while serving to release its creamy center.
  5. Season with salt and pepper: Lightly sprinkle the salt and black pepper over the layered tomatoes and peaches to enhance their natural flavors.
  6. Drizzle olive oil and balsamic glaze: Evenly pour the olive oil and balsamic glaze on top of the salad, adding richness and a touch of acidity.
  7. Add fresh basil: Scatter fresh basil strips across the salad for a fragrant, herbal note and vibrant color contrast.
  8. Toast the bread: Cut the crusty bread into slices and place them on a baking pan. Bake in a preheated oven at 450°F (232°C) for 5 minutes or until they reach your desired level of toastiness.
  9. Serve: Present the burrata salad alongside the toasted bread, allowing guests to enjoy the creamy, juicy salad with warm, crunchy bread slices.

Notes

  • Choose ripe but firm peaches and tomatoes for the best texture.
  • Burrata can be broken open before plating for a creamier experience.
  • Adjust salt and pepper to your taste preference.
  • Balsamic glaze adds sweetness and acidity; regular balsamic vinegar can be used as a substitute but use sparingly.
  • Serve immediately after assembling to enjoy the freshness of ingredients.
  • Optional: Add a sprinkle of cracked black pepper or chili flakes for some heat.
