Ingredients

Balsamic Vinaigrette

  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons raw honey
  • 2 cloves minced garlic
  • 1 teaspoon salt
  • 3 tablespoons fresh chopped basil
  • 2 tablespoons fresh thyme leaves

Salad

  • 3-4 ripe peaches, sliced into eighths
  • 2 large heirloom tomatoes, sliced into rounds
  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh burrata cheese, torn into pieces
  • 1/3 cup raw unsalted pistachios (or pine nuts)
  • Fresh basil, roughly chopped, plus whole leaves to garnish
  • 1 teaspoon kosher salt
  • 2-3 sprigs fresh thyme leaves for garnish

Instructions

  1. Make the vinaigrette: In a jar or bowl, combine olive oil, balsamic vinegar, raw honey, minced garlic, salt, chopped fresh basil, and fresh thyme leaves. Stir or shake well until all ingredients are thoroughly combined and emulsified to create a flavorful balsamic vinaigrette.
