  1. Prep the strawberries. Line a baking sheet with parchment paper. Wash the strawberries and pat them dry thoroughly with paper towels. Ensure the strawberries are completely dry and at room temperature before dipping, as any condensation or chill can prevent the chocolate from adhering properly.
  2. Melt the chocolate. Using a double boiler on the stove, melt the chocolate chips while stirring until the mixture is silky smooth. Alternatively, melt the chocolate in 20-second increments in the microwave, stirring between each interval until smooth and glossy.
  3. Dip the strawberries. Hold each strawberry by the leaves and slowly dip it into the melted chocolate until nearly reaching the top. Rotate the strawberry to coat evenly on all sides. Lift and gently shake off excess chocolate. For a neat finish, scrape off some chocolate from the underside of the strawberry on the side of the bowl to avoid pooling.
  4. Let the chocolate harden. Place the dipped strawberries carefully on the parchment-lined baking sheet. Allow them to air dry completely at room temperature for 20 to 30 minutes. For quicker hardening or a firmer finish, refrigerate the strawberries after they have set slightly at room temperature.
  5. Serve. Enjoy the chocolate covered strawberries as they are, or enhance their appearance and flavor by drizzling with alternating types of melted milk, dark, or white chocolate.
