This Perfect French Toast recipe is a delicious and classic breakfast treat featuring thick slices of brioche or Texas toast soaked in a rich custard made from eggs, whole milk, vanilla, cinnamon, and sugar. Cooked to golden perfection in a skillet with butter and oil, this dish is warm, comforting, and ready in just 20 minutes, serving 8.

Ingredients

Custard

  • 4 large eggs
  • 3/4 cup whole milk
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt

Bread and Cooking Fat

  • 8 slices day-old brioche or Texas toast (about ¾–1″ thick)
  • Equal parts butter and neutral oil (for cooking)

Instructions

  1. Make the custard. In a shallow dish, whisk together eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, and fine sea salt until the mixture is smooth and well combined.
  2. Dip the bread. Quickly dip each slice of brioche or Texas toast into the custard, coating both sides evenly. For thicker slices, allow them to soak a little longer until moistened through but be careful not to make them soggy.
  3. Cook. Heat a skillet over medium heat and add a knob of butter along with an equal amount of neutral oil to prevent burning. Cook the soaked bread slices for 2–3 minutes per side, or until they are golden brown and cooked through. Adjust the heat lower if the bread is browning too fast before cooking through.
  4. Keep warm. Transfer the cooked French toast slices to a baking sheet and place in a 200°F oven to keep warm while finishing the rest of the batch.
  5. Serve. Serve the French toast warm with your favorite toppings such as maple syrup, powdered sugar, or fresh fruit. Enjoy your delicious breakfast!

Notes

  • Use day-old bread to ensure it absorbs the custard without becoming too soggy.
  • Adjust soaking time depending on bread thickness for optimal custard absorption.
  • Combining butter with oil helps prevent the fat from burning during cooking.
  • Keeping cooked slices warm in a low oven maintains their texture and temperature while finishing the batch.
  • Toppings like fresh berries, whipped cream, or nuts can complement the flavors beautifully.
