  • ¼ cup ground flaxseed
  • 1 teaspoon ground cinnamon

Instructions

  1. Toast the oats, nuts, and seeds: Preheat your oven to 350°F (175°C). Spread the rolled oats, sliced almonds, chopped pecans, and pumpkin seeds evenly on a rimmed baking sheet. Bake for 10 to 12 minutes until fragrant and lightly toasted, stirring once halfway through for even toasting.
  2. Toast the coconut: Sprinkle the coconut flakes onto the same baking sheet and return to the oven. Bake for an additional 3 to 5 minutes until the coconut flakes turn lightly golden. Remove from oven and allow the toasted ingredients to cool to room temperature.
  3. Mix all ingredients together: In a large mixing bowl, combine the cooled toasted oats, nuts, and seeds with the chia seeds, ground flaxseed, dried cranberries, raisins, and ground cinnamon. Toss thoroughly to ensure even distribution of all components.
  4. Serve or store: Serve a ½ cup portion with your favorite yogurt, milk, or fresh fruit. For best texture, let the muesli soak in milk for at least 10 minutes to soften the chia and flaxseeds. Store any remaining muesli in an airtight container at room temperature for up to one month.
