Baked to perfection, these croissants offer a luscious blend of nutty and chocolatey flavors with optional drizzles of melted dark chocolate and pistachio crème, garnished with crunchy chopped roasted pistachios, making them an irresistible treat perfect for breakfast or dessert.

Ingredients

For the Fillings:

  • ½ cup dark chocolate chips or chopped chocolate
  • ½ cup pistachio paste (store-bought or homemade)
  • 3 tbsp powdered sugar
  • 2 tbsp heavy cream
  • 12 drops green food coloring gel (optional)

For the Croissants:

  • 1 can croissant dough (such as Pillsbury Crescent Rolls or puff pastry sheets, about 8 oz)
  • 1 egg (for egg wash)

Optional Toppings:

  • Melted dark chocolate, for drizzling
  • Pistachio crème, thinned with a bit of cream, for drizzling
  • Chopped roasted pistachios

Instructions

  1. Prepare the Pistachio Filling: In a small bowl, combine the pistachio paste, powdered sugar, and heavy cream. Add 1-2 drops of green food coloring gel if using, and mix until smooth and creamy, creating a vibrant pistachio filling.
  2. Prepare the Croissant Dough: Unroll or separate the croissant dough into triangles or rectangles according to the package instructions. Place each piece on a baking sheet lined with parchment paper for easy handling.
  3. Add Filling to Dough: Spoon a small amount of the pistachio filling onto the wide end of each dough triangle. Sprinkle or add dark chocolate chips or chopped chocolate over the filling to add a rich chocolatey center.
  4. Roll the Croissants: Carefully roll the dough from the wide end towards the pointed tip, encasing the filling completely inside. Ensure the edges are sealed well so the filling does not leak during baking.
  5. Apply Egg Wash: Beat the egg in a small bowl and brush it over the surface of each rolled croissant. This will give the croissants a beautiful golden brown color when baked.
  6. Bake: Preheat the oven to 375°F (190°C). Place the croissants in the oven and bake for about 12-15 minutes or until they are puffed and golden brown on top.
  7. Cool and Add Toppings: Let the croissants cool slightly on a wire rack. If desired, drizzle with melted dark chocolate and pistachio crème thinned with cream. Sprinkle chopped roasted pistachios on top for added texture and flavor.
  8. Serve: Enjoy the croissants warm or at room temperature for the best flavor experience.

Notes

  • Use good-quality dark chocolate for a richer flavor.
  • Ensure the croissant dough edges are sealed tightly to prevent filling leakage.
  • The green food coloring in the pistachio filling is optional and purely for aesthetic effect.
  • Store leftover croissants in an airtight container at room temperature for up to 2 days, or refrigerate for longer freshness.
  • Reheat croissants in a low oven before serving to restore crispness.
