This Pomegranate Mojito is a refreshing twist on the classic mojito cocktail, combining the tart sweetness of pomegranate juice with fresh mint, lime, and a splash of white rum for a vibrant, invigorating drink perfect for any occasion.

Ingredients

Base Ingredients

  • ½ cup pomegranate juice
  • ½ cup club soda
  • ½ cup ice cubes
  • 1 oz white rum

Fresh Ingredients

  • 8 to 10 fresh mint leaves
  • ½ lime (cut into thin wedges)
  • 2 tablespoons pomegranate seeds (optional)
  • 1 slice lime (for garnish)
  • 1 sprig fresh mint (for garnish)

Sweetener

  • 1 tablespoon sugar (or to taste)

Instructions

  1. Prepare Ingredients: Add 2 to 3 lime slices, fresh mint leaves, and pomegranate arils to a sturdy glass. Squeeze some fresh lime juice over them to release the flavor.
  2. Muddle Mixture: Using a muddler, gently press and twist the lime, mint, and pomegranate together to release their juices and aromas. Optionally add sugar to balance the tartness, and muddle it in lightly.
  3. Add Liquids and Ice: Fill the glass with ice cubes, then pour in the pomegranate juice and club soda. If desired, squeeze more lime juice for extra brightness.
  4. Add Alcohol: Optionally, pour in the white rum to make it a classic cocktail.
  5. Mix and Garnish: Stir the drink gently to combine all ingredients. Garnish with a lime slice and a sprig of fresh mint. Serve immediately and enjoy the refreshing flavors.

Notes

  • To keep it non-alcoholic, omit the white rum for a delightful mocktail.
  • Adjust the sugar to your taste preference, or substitute with a natural sweetener like honey or agave syrup.
  • Using fresh pomegranate seeds adds a nice texture and visual appeal but can be skipped if unavailable.
  • For a tangier flavor, add extra lime wedges while muddling.
  • Ensure the mint leaves are fresh for the best aroma and flavor impact.
