Ingredients

Vegetables

  • ½ pound Yukon gold potatoes, diced into small pieces
  • 1 small onion, finely diced
  • ¼ cup chives, finely diced
  • ½ cup finely chopped spinach, tightly packed

Egg Mixture

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese (divided)

Seasonings & Others

  • ½ tablespoon olive oil
  • ½ teaspoon fine sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat Oven: Set your oven to 350 degrees Fahrenheit. Prepare your silicone molds or thoroughly grease a 12-cavity muffin tin to ensure the egg bites release easily after baking.
  2. Sauté Potatoes and Onion: Heat olive oil in a large skillet over medium-high heat. Add diced potatoes and onion, then season with sea salt, black pepper, garlic powder, and paprika. Cook for about 8 minutes until potatoes are crisp-tender, then remove from heat.
  3. Blend Egg Mixture: In a blender, combine cottage cheese and eggs. Blend until the mixture is creamy and free of lumps.
  4. Assemble Egg Bites: Evenly distribute the sautéed potato and onion mixture into each mold or muffin cup. Sprinkle half of the shredded cheddar cheese, then add all the chives and chopped spinach. Pour the smooth egg and cottage cheese mixture on top, then sprinkle the remaining cheddar cheese and additional chives over the surface.
  5. Bake and Broil: Bake the egg bites for 18 to 20 minutes until set. For a golden, slightly crisp top, broil them for 1 to 2 minutes—watch carefully to prevent burning. Remove and let cool slightly before serving.

Notes

  • Using silicone molds is preferred for easy removal, but greasing muffin tins well works as an alternative.
  • Broiling time is short and should be monitored closely to avoid burning the tops.
  • These egg bites can be refrigerated and reheated for a convenient breakfast option.
  • Feel free to customize with other herbs or cheeses to your preference.
