Ingredients

Dry Ingredients

  • 1 ½ cups almond flour (about 212 grams)
  • ½ cup vanilla protein powder
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon sea salt

Wet Ingredients

  • ½ cup maple syrup (at room temperature)
  • 2 large eggs (at room temperature)
  • ¼ cup coconut oil (melted)
  • ¼ cup unsweetened almond milk (at room temperature)
  • 2 teaspoons vanilla extract

Icing

  • 1 cup powdered sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons unsweetened almond milk
  • Rainbow sprinkles (for topping, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s at the right temperature when you’re ready to bake the donuts.
  2. Mix Dry Ingredients: In a medium bowl, combine the almond flour, vanilla protein powder, baking powder, and sea salt. Stir these together until they are well mixed and evenly distributed.
  3. Add Wet Ingredients: To the same bowl containing dry ingredients, add the maple syrup, eggs, melted coconut oil, unsweetened almond milk, and vanilla extract. Mix just until combined to form your donut batter. Avoid overmixing to keep the batter light.
  4. Prepare Donut Pans: Lightly spray two donut pans (each with six cavities) with cooking spray to prevent sticking. Evenly spoon or pipe the batter into all 12 cavities.
  5. Bake Donuts: Place the pans in the oven and bake for about 10 minutes, or until the donuts spring back when lightly pressed. Once done, cool them in the pan for 2 minutes before carefully inverting them onto a wire rack to cool completely.
  6. Make Icing: While the donuts cool, prepare the icing by mixing together powdered sugar, cocoa powder, and almond milk in a small bowl until smooth and creamy.
  7. Frost and Decorate: Once the donuts are completely cooled, spread the cocoa icing evenly over each donut. If desired, sprinkle rainbow sprinkles on top for a fun and colorful finish. Place the frosted donuts back on the wire rack to allow the glaze to set firmly before serving.
