  • 1/4 cup chopped or torn fresh basil leaves, optional

Instructions

  1. Heat the olive oil: In a medium-size saucepan, heat 1 tablespoon of extra virgin olive oil over medium-low heat for about 1 minute until warmed.
  2. Add pesto and Italian seasoning: Stir in 1/4 cup prepared or homemade pesto and 1 tablespoon of Italian seasoning. Cook for another minute, stirring frequently, until fragrant.
  3. Combine tomatoes and spices: Add a 14 ½-ounce can of fire-roasted tomatoes, 1 28-ounce can of crushed tomatoes, 1/4 teaspoon crushed red pepper, and 1/2 teaspoon kosher salt to the saucepan. Stir well to combine all ingredients.
  4. Simmer the sauce: Bring the mixture to a low but steady simmer. Allow it to cook uncovered for 20 minutes, stirring occasionally to prevent sticking and to blend flavors.
  5. Adjust seasoning and add basil: Taste the sauce and add more salt if desired. Stir in 1/4 cup chopped or torn fresh basil leaves if using, for a fresh herbal note.
