Instructions

  1. Prepare the lime zest: Wash and dry the lime thoroughly. Using a microplane grater, zest the lime to yield about 1/2 to 1 teaspoon of zest. Set this aside for later use.
  2. Combine the vegetables and seasonings: In a large mixing bowl, add the shredded or thinly sliced cabbage, finely chopped or shredded carrots, diced onion, lime juice, lime zest, ground cumin, garlic powder, olive oil (if using), maple syrup, and sea salt.
  3. Massage the mixture: Use clean hands to massage the cabbage mixture for approximately 2 minutes. This helps to soften the cabbage and allows the flavors to meld together beautifully.
  4. Taste and adjust seasonings: Sample the slaw and adjust the flavors as needed. Add more lime juice for extra acidity, more lime zest for bright citrus notes, additional maple syrup for sweetness, more salt for seasoning, or increase garlic powder and cumin for stronger garlic and smoky flavors.
