Quick Pickled Red Onions are a simple and vibrant condiment that brings a tangy, slightly sweet bite to any dish. Made with thinly sliced red onions soaked in an easy brine of apple cider vinegar, honey, and kosher salt, these pickled onions are ready in just about an hour and can brighten up salads, sandwiches, tacos, and more while lasting for weeks in the fridge.

Ingredients

Main Ingredients

  • 1 medium red onion
  • ½ cup hot water (not boiling)
  • ½ cup apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 ½ teaspoons kosher salt

Optional Flavor Boosters

  • Garlic cloves
  • Black peppercorns
  • Red pepper flakes
  • Bay leaf
  • Fresh herbs (such as thyme or dill)

Instructions

  1. Slice: Thinly slice the red onion using a sharp knife or mandoline to ensure uniform pieces. Place the sliced onions into a clean 16-ounce jar. Add any optional flavor boosters you prefer such as garlic cloves or herbs.
  2. Stir: In a separate measuring cup, combine the hot water, apple cider vinegar, honey (or maple syrup), and kosher salt. Stir well until the honey and salt are fully dissolved.
  3. Pour: Carefully pour the prepared brine over the onions in the jar, making sure they are fully submerged.
  4. Store: Seal the jar with a lid and refrigerate. The onions will be ready to eat after about 1 hour when they develop a bright pink color. They can be kept refrigerated for 2 to 3 weeks.

Notes

  • Use a mandoline for even onion slices and to speed up preparation.
  • The pickled onions will have a softer texture the longer they sit, so for crunchier onions, consume within the first week.
  • Feel free to experiment with additional flavor boosters like bay leaves, peppercorns, or fresh herbs for unique flavor variations.
  • Store the pickled onions in a sealed glass jar for best freshness and flavor retention.
