Ingredients

French Toast Base

  • 8 slices brioche bread, sliced about 3/4-1 inch thick

  • 1/4 tsp salt
  • 1/4 cup sugar

Instructions

  1. Assemble the French Toast: Slice the brioche bread to about 3/4-1 inch thick and arrange the slices slightly overlapping in a 9×9 square baker. Tuck in about half a cup of the fresh raspberries around and beneath the bread slices for bursts of fruit throughout.
  2. Prepare the Custard Mixture: In a medium mixing bowl, whisk together the milk, half and half, eggs, cardamom, salt, sugar, and vanilla bean paste until smooth and well combined. This mixture will soak the bread and infuse it with flavor.
  3. Soak the Bread: Pour the custard mixture evenly over the arranged bread and raspberries in the baking dish, making sure to cover everything. Gently press the bread down so it is mostly submerged in the custard. Cover the dish tightly and refrigerate overnight to allow the flavors to meld and the bread to absorb the liquid.
  4. Preheat the Oven: The following morning, preheat your oven to 350°F (175°C) to prepare for baking.
  5. Prepare for Baking: Remove the French toast from the refrigerator. Cut the tablespoon of butter into small pieces and dot them over the surface of the soaked bread. Scatter the remaining half cup of fresh raspberries over the top for freshness and color.
