  • ½ red cabbage, finely shaved

  • 1 jalapeño, seeded and finely chopped
  • 1 teaspoon lime zest (from 1 lime)
  • 1½ teaspoons lime juice (from 1 lime), plus more to taste
  • ¼ cup mayonnaise
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Combine Ingredients: In a large bowl, mix together the finely shaved red cabbage, matchstick-cut Granny Smith apples, thinly sliced red onion, chopped cilantro, chopped mint leaves, and seeded finely chopped jalapeño. Add the lime zest, lime juice, and mayonnaise. Season with kosher salt and freshly cracked black pepper to taste. Gently toss all ingredients until well combined and evenly coated with the dressing.
  2. Chill the Slaw: Cover the bowl and place it in the refrigerator for at least 30 minutes to allow the flavors to meld and the slaw to chill thoroughly before serving. Adjust additional lime juice or seasoning if desired prior to serving.
