Topped with a creamy, tangy avocado and cilantro green sauce, and garnished with cotija cheese, lime, and fresh onion, these tacos are a quick, delicious meal perfect for any taco lover.

Ingredients

Chicken

  • 1 lb. boneless skinless chicken thighs
  • 1/2 tablespoon soy sauce
  • 1/2 tablespoon avocado oil
  • 1 clove garlic, grated (or 1 tsp garlic paste, or 1/2 teaspoon garlic powder)
  • 2-3 tablespoons taco seasoning (Siete brand recommended)

Green Sauce

  • 1/2 avocado
  • 1/2 cup mayo
  • 3-ounce chunk of cotija cheese
  • 1 big handful cilantro stems and leaves (roughly 1/2 cup)
  • 1 clove garlic
  • Juice of 1-2 limes (about 2 tablespoons)
  • 2 tablespoons water (more as needed)

To Serve

  • Tortillas
  • Limes, cilantro, and diced onion for topping

Instructions

  1. Season the Chicken: Trim any excess fat off the chicken thighs if desired. In a bowl, toss the chicken with soy sauce, avocado oil, and grated garlic. Sprinkle with taco seasoning and mix thoroughly to coat each piece evenly.
  2. Cook the Chicken: Place the seasoned chicken thighs in the basket of an air fryer. Cook at 400°F (204°C) for 10-12 minutes until the chicken is golden, crusty on the outside, juicy, and cooked through. Alternatively, see notes for stovetop method.
  3. Make the Green Sauce: While the chicken cooks, prepare the sauce by blending avocado, mayo, cotija cheese, cilantro, garlic clove, lime juice, and water in a food processor or blender. Adjust the water to reach your desired consistency—add more if too thick, or more avocado/mayo if too thin.
  4. Chop the Chicken: When cooked, let the chicken rest for a few minutes to retain juices. Then roughly chop or shred into bite-sized pieces. Squeeze additional fresh lime juice over the chicken for brightness.
  5. Assemble and Serve: Warm your tortillas, then add a dollop of the green sauce. Top with a generous portion of the juicy chicken, and finish with fresh cilantro leaves and diced onion. Add extra lime and sauce to taste. Enjoy your delicious chicken tacos!

Notes

  • If you don’t have an air fryer, cook the seasoned chicken thighs on a skillet over medium heat with a bit of oil, about 6-8 minutes per side until golden and cooked through.
  • Adjust taco seasoning amount based on your spice preference.
  • For a creamier sauce, increase the avocado or mayo slightly.
  • Use corn or flour tortillas depending on preference or dietary needs.
