Instructions

  1. Prepare the cookie sandwiches: Spread 30 Ritz crackers in a single layer on a parchment-lined baking sheet. Spoon about 1/2 teaspoon of creamy peanut butter into the center of each cracker. Top each with another cracker, gently pressing to form a sandwich. You should have 30 sandwiches in total.
  2. Chill the sandwiches: Place the baking sheet in the freezer for 7-10 minutes to allow the peanut butter to slightly harden, which helps keep the sandwiches intact during chocolate dipping.
  3. Melt the white chocolate: While chilling the sandwiches, place white chocolate chips or candy melts in a microwave-safe bowl. Microwave in 20-second intervals, stirring well after each, until the chocolate is fully melted and smooth. If the melted chocolate is too thick for dipping, stir in 1-2 tablespoons of coconut oil to thin it out.
  4. Dip and decorate: Working quickly, dip one side of each peanut butter sandwich into the melted white chocolate, or alternatively, use a spoon to spread the chocolate over one side. Immediately sprinkle with holiday sprinkles, then place the cookie flat on a parchment-lined baking sheet. Repeat with all cookies.
  5. Set the chocolate: Allow the cookies to rest on the baking sheet at room temperature until the chocolate coating is fully set, about 1 hour.
