  • 1 teaspoon kosher salt, plus more to taste
  • 2 cups walnut halves
  • ½ cup crumbled feta cheese
  • ½ cup lightly packed chopped fresh cilantro
  • 2 Tablespoons chopped fresh mint

Instructions

  1. Make the dressing: In a large serving bowl, whisk together the crushed or grated garlic, kosher salt, apple cider vinegar, Dijon mustard, cumin, honey, and cayenne pepper until combined. While whisking steadily, slowly drizzle in the extra virgin olive oil to emulsify the dressing. Add the rinsed and drained chickpeas and stir well to coat with the dressing. Let the mixture stand while you prepare the roasted carrots.
  2. Preheat the oven: Set your oven to 400 degrees Fahrenheit (205 degrees Celsius) to get it ready for roasting the carrots.
  3. Prepare the carrots for roasting: On a large, rimmed baking sheet, toss the carrot slices, smashed garlic cloves, cumin seeds, heat-safe oil, and kosher salt until everything is well coated. Spread the mixture evenly across the pan for uniform roasting.
