Ingredients

Meat and Seasonings

  • 1 pound lean ground beef
  • 2 tablespoons flour
  • 2 teaspoons chili powder
  • 1 ¼ teaspoons salt
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper (more or less to taste)

Cheese and Dairy

  • 1 10 oz. can MILD Rotel (diced tomatoes and green chilies)
  • ½ cup mild salsa verde
  • 1 ¼ cup milk (plus more as needed)
  • 8 oz. full fat block cream cheese (cubed and very soft)
  • 2 cups freshly shredded mild or medium cheddar cheese (NOT SHARP)

To Serve

  • Tortilla chips
  • Diced tomatoes
  • Cilantro
  • Hot sauce to taste

Instructions

  1. Cook Beef: Brown the lean ground beef in a large skillet over medium-high heat until it’s almost cooked through. Add the flour and all the spices including chili powder, salt, cumin, smoked paprika, garlic powder, onion powder, and cayenne pepper. Continue cooking over medium heat for one more minute until the ground beef is fully cooked and spices are well incorporated.
  2. Add Ingredients and Simmer: Stir in the entire can of mild Rotel with its juices, the mild salsa verde, and 1 ¼ cup of milk. Bring the mixture to a gentle simmer while scraping the brown bits off the bottom of the pan. Allow it to simmer on medium heat for about 5 minutes, stirring occasionally to prevent sticking.
  3. Make it Cheesy: Reduce the heat to low, then add the cubed cream cheese. Stir continuously until the cream cheese has completely melted into the mixture, creating a creamy base. Gradually add the shredded mild or medium cheddar cheese a handful at a time, stirring until each addition is melted and smooth, forming a thick, cheesy dip.
  4. Adjust and Serve: Taste the dip and adjust seasonings by adding extra hot sauce, cayenne pepper, or salt if desired. If the dip is too thick, thin it out by stirring in more milk to reach your preferred consistency. Serve warm with tortilla chips, garnished with diced tomatoes and fresh cilantro. For keeping warm during a party, transfer to a crockpot and use the warm setting.

Notes

  • Use mild or medium cheddar cheese instead of sharp cheddar to maintain the authentic creamy and mild flavor profile.
  • You can adjust the heat level by varying the amount of cayenne pepper or hot sauce.
  • If you prefer a thinner dip, add extra milk gradually while cooking or when serving.
  • Keeping the dip warm in a crockpot helps maintain the creamy texture and makes it easier to serve at gatherings.
  • This recipe pairs perfectly with sturdy tortilla chips for dipping.
