  • 1 ¼ pounds fresh salmon (skin removed, about 1 pound salmon meat)

Instructions

  1. Prep the salmon: After removing the skin from the salmon, cut the salmon into chunks. Then, hand chop it with a chef’s knife for a minced chop, keeping some larger pieces for texture.
  2. Mix: In a mixing bowl, combine the salmon, egg, almond flour, red onion, parsley, garlic, Dijon mustard, lemon juice, kosher salt, and black pepper. Gently mix until just combined, being careful not to overwork the mixture to maintain tender burgers.
  3. Form and chill: Shape the salmon mixture into 4 evenly sized patties. Refrigerate the patties for 20 to 30 minutes to help them hold together during cooking.
  4. Cook in a pan or grill: For stovetop cooking, heat oil in a skillet over medium heat. Cook the patties for 3 to 4 minutes per side until golden brown and cooked through. For grilling, cook the patties for 4 to 5 minutes per side on a preheated grill. Note that grilled patties can be more fragile; handle gently to prevent breakage.
