A vibrant and crunchy Savoy Cabbage Salad featuring thinly sliced cabbage, fresh vegetables, and toasted nuts, all tossed in a flavorful ginger-soy dressing. Perfect as a light, refreshing side or a healthy snack.

Ingredients

Vegetables and Nuts

  • Center of 1 head of Savoy cabbage, quartered and thinly sliced
  • 1 large English cucumber, diced
  • 2 medium carrots, grated or thinly sliced
  • 1 red bell pepper, diced
  • 5 green onions, sliced
  • 1/2 cup slivered almonds
  • 1/3 cup roughly chopped cashews

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 clove of garlic, grated
  • 1 teaspoon dijon mustard

Instructions

  1. Prepare the Vegetables: Place the thinly sliced cabbage, diced cucumber, grated carrots, diced red bell pepper, and sliced green onions in a large mixing bowl. Toss gently to combine all the fresh vegetables evenly.
  2. Toast the Nuts: Heat a small skillet over medium-high heat. Once hot, add the slivered almonds and roughly chopped cashews. Toast for about 1 minute or until golden brown, tossing occasionally to prevent burning and ensure even toasting.
  3. Add Nuts to Salad: Remove the nuts from the skillet and immediately add them to the bowl with the prepared vegetables to maintain their crispness and flavor.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, rice wine vinegar, freshly grated ginger, soy sauce, lime juice, grated garlic, and dijon mustard until the dressing is fully emulsified and smooth.
  5. Toss the Salad: Pour the dressing over the combined vegetables and nuts. Toss thoroughly until every piece is well-coated with the flavorful dressing.
  6. Serve or Store: Serve the salad immediately for the best crisp texture, or store it in the refrigerator for up to 4 days to allow the flavors to meld. Enjoy chilled or at room temperature.

Notes

  • Use fresh ginger for the best flavor in the dressing.
  • Toast nuts carefully to avoid burning; they add a wonderful crunch and flavor.
  • This salad can be stored in an airtight container in the refrigerator for up to 4 days.
  • For a nut-free version, omit the almonds and cashews or substitute with seeds.
  • Adjust soy sauce quantity for lower sodium preference.
