Ingredients

Stuffing

  • 4 cups bread cubes (brioche, dried in the oven)
  • 2 tablespoons unsalted butter
  • ½ white onion (medium, diced)
  • 2 ribs celery (diced)
  • ¼ cup chicken broth
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Kosher salt (to taste)
  • Black pepper (to taste)

Turkey

  • 4 tablespoons unsalted butter (at room temperature)
  • 1½ tablespoons fresh sage (chopped)
  • 3 cloves garlic (minced)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper (freshly cracked)
  • 2 boneless turkey breasts (2 to 3 pounds, skin-on)

Green Beans

  • 1 pound green beans (fresh)
  • 1½ tablespoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

Sweet Potatoes

  • 4 sweet potatoes (small or medium)
  • 2 tablespoons unsalted butter (melted)
  • 1 tablespoon maple syrup
  • 1 cup mini marshmallows

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat the oven to 425°F. Spray one or two large rimmed baking sheets with nonstick cooking spray to prevent sticking during baking.
  2. Prepare Herb Butter for Turkey: In a small bowl, combine unsalted butter, chopped sage, minced garlic, kosher salt, and freshly cracked black pepper. Mix well to create a flavorful herb butter.
  3. Butter Turkey Breasts: Using your fingers, gently separate the skin from the turkey breasts and carefully spread the herb butter mixture both under the skin and on top. Place the turkey breasts onto the prepared baking sheet.
  4. Bake Turkey: Place the baking sheet in the oven and bake the turkey breasts for 45 minutes until cooked through and golden.
  5. Prepare Stuffing Base: While the turkey bakes, melt butter in a large skillet over medium-high heat. Add diced onions and celery and cook until tender, about 5 minutes.
  6. Combine Stuffing Ingredients: In a large mixing bowl, combine the cooked onion and celery mixture with dried bread cubes, chicken broth, chopped sage, and thyme. Season with salt and pepper to taste. Stir until the broth is absorbed and the mixture is well combined.
  7. Arrange Stuffing on Baking Sheet: Place the prepared stuffing mixture on one side of the baking sheet next to the turkey breasts.
  8. Prepare Green Beans: Place the green beans in a single layer on the baking sheet. Toss them with olive oil, kosher salt, and black pepper to season evenly.
  9. Bake Stuffing and Green Beans: Return the baking sheet with turkey, stuffing, and green beans to the oven and bake for an additional 15 minutes to finish cooking together.
  10. Cook Sweet Potatoes: Pierce sweet potatoes with a fork several times. Microwave them for 10 to 12 minutes or until tender when pierced with a fork.
  11. Prepare Sweet Potatoes for Baking: Cut the sweet potatoes lengthwise down the center. In a small bowl, mix melted butter and maple syrup, then brush the mixture inside each sweet potato. Top them with mini marshmallows.
  12. Bake Sweet Potatoes: Place the sweet potatoes on a baking sheet in a single layer. Bake in the oven until the marshmallows are lightly browned, about 5 minutes.
  13. Slice and Serve: Once everything is cooked, slice the turkey breasts and serve immediately alongside the stuffing, green beans, and sweet potatoes.

Notes

  • To dry bread cubes for stuffing, cut brioche bread into cubes and bake at 250°F for 30 minutes until dry and slightly toasted.
  • If skin-on turkey breasts are unavailable, extra butter under the skin will help keep the meat moist.
  • Microwaving sweet potatoes speeds up the cooking process but they can also be baked entirely in the oven if preferred (about 45-60 minutes at 400°F).
  • Adjust seasoning of stuffing and vegetables according to taste.
  • Ensure turkey reaches an internal temperature of 165°F for safe consumption.
