This Shrimp Avocado Ceviche is a fresh, vibrant dish combining tender cooked shrimp with creamy avocado, crisp cucumbers, and zesty lime. Ingredients

Shrimp

  • 1 pound shrimp, peeled and deveined

Vegetables & Herbs

  • 2 avocados, cubed
  • 2 Persian cucumbers, chopped
  • 1/2 cup tomatoes, chopped
  • 1-2 jalapeños, seeded (optional) and chopped
  • 1 small shallot, finely chopped
  • 1 clove garlic, grated
  • 1/2 cup cilantro, roughly chopped

Seasonings & Liquids

  • 1 tbsp lime zest
  • 1/4 cup lime juice
  • 1/3 cup salsa verde
  • Flaky sea salt, to taste

Instructions

  1. Cook the shrimp: Bring a large pot of water to a boil over high heat. Add the peeled and deveined shrimp and simmer until they turn pink and opaque, about 2-3 minutes depending on the size of the shrimp.
  2. Cool and chop shrimp: Drain the shrimp and immediately run them under cold water to stop the cooking process. Once cooled, chop the shrimp into bite-sized pieces.
  3. Combine ingredients: In a large bowl, add the chopped shrimp, cubed avocado, chopped Persian cucumbers, tomatoes, jalapeños (seeded if you prefer less heat), finely chopped shallot, grated garlic, and roughly chopped cilantro.
  4. Add seasonings: Stir in the lime zest, lime juice, and salsa verde, mixing gently to combine all flavors evenly without mashing the avocado.
  5. Season and serve: Season the ceviche with flaky sea salt to taste, then serve immediately with plenty of chips or your choice of accompaniment.
