This Simple Salsa Verde recipe is a quick and easy way to make a vibrant, tangy, and mildly spicy Mexican green salsa using charred tomatillos, serrano or jalapeno peppers, garlic, onion, cilantro, and kosher salt. Perfect as a dip, topping, or ingredient for numerous Mexican dishes.

Ingredients

  • 10 tomatillos (husks removed)
  • 1 to 2 serrano or jalapeno peppers (stemmed, halved and seeds removed for a milder salsa)
  • 4 garlic cloves (unpeeled)
  • ½ medium onion (diced)
  • ⅓ cup roughly chopped cilantro leaves

  • 1 teaspoon kosher salt

Instructions

  1. Char ingredients: Prepare the tomatillos, peppers, and unpeeled garlic by placing them on a baking sheet for charring.
  2. Broil the vegetables: Preheat your oven’s top broiler and position a rack about 4 inches below it. Broil the tomatillos, peppers, and garlic for 5 minutes, then flip and broil for another 4 to 5 minutes until they are slightly charred and blistered. Allow them to cool until safe to handle.
  3. Pulse together: Transfer the charred tomatillos and peppers to a food processor or high-powered blender. Peel the garlic and add it along with diced onion, chopped cilantro, and kosher salt. Pulse a few times until the salsa reaches your desired texture.
  4. Serve: Pour the freshly made salsa verde into a serving bowl and enjoy as a dip, sauce, or complement to your favorite dishes.

  • Remove seeds from peppers to reduce heat for milder salsa.
