This Slow Cooker BBQ Chicken Thighs recipe features tender, juicy chicken thighs cooked low and slow in a flavorful Raspberry Chipotle BBQ sauce. The chicken is first seared to develop a crispy skin, then slow-cooked to perfection before being broiled with a final layer of tangy, sweet, and smoky sauce for a deliciously caramelized finish. Perfect for a comforting meal with minimal hands-on time.

Ingredients

Chicken and Seasoning

  • 6 chicken thighs with skin and bone
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil

Cooking and Sauce

  • 3 tablespoons butter
  • 2 cups Raspberry Chipotle BBQ sauce (divided: 1¾ cups plus ¼ cup)

Instructions

  1. Prepare and Season: Pat the chicken thighs dry with a paper towel to ensure crispiness when searing. In a small bowl, mix garlic powder, paprika, salt, and pepper, then evenly spread this seasoning blend on both sides of the chicken thighs.
  2. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs skin side down and cook for 3-4 minutes per side until the skin is nicely browned. This step locks in flavor and adds texture. Remove the chicken and place it skin side up in the slow cooker.
  3. Add Butter and Sauce: Place a slice of butter on top of each chicken thigh. Pour 1¾ cups of Raspberry Chipotle BBQ sauce over the chicken, reserving ¼ cup for broiling later.
  4. Slow Cook: Cover and cook on low heat for 4 hours. The chicken will become tender and should reach an internal temperature of 165ºF to ensure it is fully cooked and safe to eat.
  5. Broil for Finish: Once cooked, transfer the chicken thighs to a baking sheet lined with aluminum foil. Preheat the oven broiler. Brush the reserved ¼ cup of BBQ sauce over the chicken and broil for 2-3 minutes until the sauce bubbles and the top becomes crispy and caramelized.

Notes

  • For best results, use bone-in, skin-on chicken thighs to keep the meat juicy and flavorful.
  • Make sure to pat the chicken dry before seasoning to achieve a better sear on the skin.
  • If you do not have a broiler, you can place the chicken under a very hot oven at 450ºF for a few minutes to caramelize the sauce.
  • The Raspberry Chipotle BBQ sauce adds a nice smoky sweetness balanced by a slight heat – adjust the amount based on your heat preference.
  • Use a meat thermometer to ensure chicken reaches 165ºF internally for safe consumption.
