This refreshing Smashed Cucumber Avocado Salad combines the crispness of smashed Persian cucumbers with creamy ripe avocados, enhanced by a vibrant Asian-inspired dressing and garnished with bold toppings like furikake and chili crisp. Perfect as a light side dish or a healthy snack, it’s easy to prepare and packed with fresh flavors.

Ingredients

For The Cucumber Salad

  • 6 Persian cucumbers (~1 pound), halved lengthwise
  • 2 large ripe avocados, cut into large chunks
  • 2 scallions, thinly sliced
  • 2 tablespoons finely chopped fresh cilantro
  • Optional toppings: furikake and chili crisp to taste

For The Dressing

  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1½ teaspoons granulated sugar
  • 1 small clove garlic, finely grated
  • ¼ teaspoon fine sea salt, plus more to taste

Instructions

  1. Smash the cucumbers. Place the cucumbers flat-side-down on a cutting board and gently smash them with the side of a knife until they crack open; then cut the smashed cucumbers on a diagonal into approximately 1-inch pieces.
  2. Make the dressing. In a small bowl, whisk together the rice vinegar, soy sauce, toasted sesame oil, granulated sugar, finely grated garlic, and sea salt until the sugar dissolves completely and the dressing is well combined.
  3. Toss the salad. In a large bowl, combine the smashed cucumber pieces, avocado chunks, thinly sliced scallions, and chopped cilantro. Drizzle the prepared dressing over the salad and gently toss to coat all ingredients evenly, taking care not to mash the avocado.
  4. Finish and serve. Spoon chili crisp over the top of the salad and sprinkle with furikake to your preference. Give a light toss to distribute toppings or serve immediately and enjoy the fresh flavors.

Notes

  • Use Persian cucumbers as they are less seedy and more tender, perfect for smashing.
  • Adjust chili crisp and furikake toppings according to your spice and flavor preference.
  • Serve immediately for the best texture; avocado can brown if left too long.
  • This salad pairs well with grilled meats or as a light, refreshing appetizer.
  • For a gluten-free version, ensure the soy sauce is gluten-free or substitute with tamari.
