Ingredients

Dough

  • 450 g strong bread flour (with a protein level of at least 12%)
  • 1 tbsp sugar (white or brown)
  • 1 tsp salt
  • 230 g water
  • 160 g active sourdough starter (100% hydration)

Topping and Boiling Solution

  • Coarse salt (for topping)
  • 2 liters water
  • 3 tbsp baking soda

Instructions

  1. Mix dry ingredients: In the bowl of a stand mixer, combine the bread flour, sugar, and salt, mixing to evenly distribute.
  2. Add wet ingredients: Pour in the water and active sourdough starter into the dry mix.
  3. Knead the dough: Using the dough hook attachment, run the mixer on medium speed for 12-15 minutes until the dough is smooth, elastic, and passes the windowpane test.
  4. First rise (bulk fermentation): Shape the dough into a ball, place it in a lightly oiled large bowl, and cover with cling film or a damp tea towel. Let it rise for 3-5 hours at room temperature until it doubles in volume.
  5. Cold ferment: After rising, cover the bowl tightly to prevent drying and refrigerate for at least 8 hours or overnight to develop flavor.
  6. Prepare for shaping: On the second day, line two large baking sheets with parchment paper. Remove the dough from the fridge and place it on a lightly floured surface.
