This Spicy Mango Salad is a vibrant, fresh, and tangy dish combining the sweetness of ripe mangoes with the crunch of Persian cucumbers and a spicy kick from green chili olive oil. Enhanced with mango white balsamic vinegar and garnished with fresh cilantro and roasted peanuts, this quick and easy salad is perfect for a light lunch or a refreshing side dish.

Ingredients

Produce

  • 2 large mangoes (firm-ripe)
  • 2 Persian cucumbers
  • 1 medium red onion
  • ½ cup cilantro, chopped

Pantry

  • ½ cup roasted peanuts, roughly chopped (optional)
  • 2 to 3 tablespoons alfoos mango white balsamic vinegar
  • 1 to 2 tablespoons green chili olive oil
  • Salt, to taste

Instructions

  1. Prepare the mango and cucumbers: Peel the mangoes and cut them into 2-inch by ¼-inch sticks. Similarly, peel the cucumbers and cut them into sticks of the same size. Thinly slice the red onion and set all aside.
  2. Combine ingredients: In a medium-sized bowl, add the chopped mangoes, cucumbers, and sliced onion. Stir in 2 to 3 tablespoons of alfoos mango white balsamic vinegar and 1 to 2 tablespoons of green chili olive oil. Mix thoroughly to ensure even coating of the dressing.
  3. Garnish and serve: Add the chopped cilantro and roasted peanuts over the salad as a garnish. You can serve this salad immediately for a fresh taste or chill it briefly before serving to enhance flavors.

Notes

  • Use firm-ripe mangoes to maintain a good texture that holds well in the salad.
  • Adjust the quantity of green chili olive oil to suit your preferred spice level.
  • Roasted peanuts are optional but add a nice crunchy texture and nutty flavor.
  • Chilling the salad before serving helps meld the flavors but avoid keeping it too long to maintain freshness.
  • Salt should be adjusted according to taste preferences.
