Ingredients

Soup Base

  • 1 onion, cut into large chunks
  • 1 (28 ounce) can of whole tomatoes

  • 1 large or 2 small garlic cloves
  • 2 tablespoons of tomato paste

Spices and Seasonings

  • 1 tablespoon of crushed Calabrian chili peppers

Instructions

  1. Prepare the aromatics: Heat the butter and extra virgin olive oil in a large pot over medium heat. Add the onion chunks and sauté until softened and translucent, about 5-7 minutes. Add the garlic and cook for another 1-2 minutes until fragrant.
  2. Add tomato and seasoning: Stir in the tomato paste and crushed Calabrian chili peppers, cooking for about 2 minutes to deepen the flavors. Then add the entire can of whole tomatoes with their juice.
  3. Pour in broth and spices: Add the 2.5 cups broth (vegetable, chicken, or chicken stock), fresh black pepper, dry oregano, dry parsley, and kosher salt to taste. Bring the mixture to a gentle simmer.
  4. Simmer the soup: Reduce heat to low and simmer uncovered for 25-30 minutes to allow the flavors to meld and the soup to thicken slightly.
  5. Blend the soup: Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and puree until smooth.
  6. Adjust seasoning and serve: Taste the soup and adjust salt or pepper as desired. Serve hot with an optional sprinkle of red pepper flakes for extra heat.
