Remove the pepper earlier if it chars faster than the onions. Let cool slightly, then chop. Combine the chopped pepper, onions, diced tomato, cilantro, and lime juice in a bowl. Season with salt and toss well. Set aside.
  2. Whisk Eggs: In a large mixing bowl, whisk the eggs until well blended. Season with salt and black pepper to taste. Set aside.
  3. Cook Sausage: Spray a 12-inch non-stick skillet with cooking spray and heat over medium-high heat. Add turkey breakfast sausage in chunks, breaking it up occasionally as it cooks through.
