This Spinach Lasagna Rolls recipe offers a delicious twist on classic lasagna by rolling cooked noodles filled with a creamy ricotta and spinach mixture, topped with marinara sauce and melted mozzarella cheese. Easy to prepare and perfect for a comforting family dinner, these cheesy rolls bake to golden perfection in just 45 minutes.

Ingredients

Lasagna Rolls

  • 1 package lasagna noodles
  • 32 oz ricotta cheese
  • 4 cups fresh spinach
  • 2 eggs
  • 1/4 cup parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 24 oz marinara sauce

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the proper temperature while you prepare the lasagna rolls.
  2. Cook Noodles: Boil the lasagna noodles according to the package instructions until al dente. Drain them carefully and lay flat on wax paper to cool, preventing them from sticking together.
  3. Prepare Spinach: Steam the fresh spinach until wilted, then chop it finely to blend smoothly into the cheese mixture.
  4. Mix Filling: In a medium bowl, combine ricotta cheese, chopped spinach, eggs, parmesan cheese, garlic powder, salt, pepper, and 1 cup of shredded mozzarella cheese. Mix thoroughly until well integrated.
  5. Assemble Rolls: Spread approximately 1 cup of marinara sauce evenly across the bottom of a 9 x 13 inch baking dish. Then spoon the ricotta-spinach mixture evenly onto each lasagna noodle, spreading about 1/4 inch thick. Carefully roll up each noodle and place seam-side down into the baking dish.
  6. Add Toppings: Spoon the remaining marinara sauce over the top of each lasagna roll. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese evenly over the rolls.
  7. Bake: Bake the assembled rolls in the preheated oven for 35-40 minutes, or until the cheese topping is melted, bubbly, and slightly golden.

Notes

  • You can substitute fresh spinach with frozen spinach; just be sure to thaw and thoroughly drain excess moisture before mixing.
  • For a richer flavor, add some fresh basil or oregano to the ricotta mixture.
  • Lasagna noodles can be substituted with no-boil noodles to save prep time, though cooking time may vary.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
