Ingredients

Nut Base

  • 1/2 cup raw cashews (or blanched almonds)
  • 2 cups boiling water

Fruit and Flavor

  • 1 cup fresh strawberries (about 7 medium)
  • 1/4 cup freeze-dried strawberries
  • 4 medjool dates (about 3 ounces), pitted
  • 1 teaspoon vanilla extract
  • A pinch of fine sea salt

Pudding Mix

  • 3/4 cup filtered water
  • 1/2 cup chia seeds

Instructions

  1. Soak Cashews: In a blender, combine the raw cashews and 2 cups of boiling water. Set this mixture aside to soak for 30 minutes, allowing the cashews to soften and blend smoothly.
  2. Blend Ingredients: After soaking, add the fresh strawberries, freeze-dried strawberries, pitted medjool dates, vanilla extract, and a pinch of fine sea salt to the blender. Puree everything together until the mixture is completely smooth and creamy.
  3. Mix Chia Seeds: Transfer the blended mixture to a large bowl. Stir in 3/4 cup of filtered water and the chia seeds, whisking thoroughly to ensure everything is well combined.
  4. Chill to Set: Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, allowing the chia seeds to absorb the liquid and the pudding to reach a gel-like consistency.
  5. Serve: Serve the pudding chilled, optionally topped with extra fresh fruit. Store any leftovers in an airtight container in the refrigerator and consume within 4 days.
