These Strawberry Pop-Tart Ice Cream Sandwiches are a delightful frozen treat combining classic strawberry pop tarts with layers of vanilla and strawberry ice cream, strawberry jam, and a sweet vanilla glaze topped with fun sprinkles. Perfect for a summer dessert or any time you want an indulgent, nostalgic dessert that’s easy to assemble and sure to impress.

Ingredients

Pop-Tart Sandwich Layer

  • 9-12 strawberry pop tarts (store-bought or homemade)
  • 2 pints vanilla ice cream
  • 1 pint strawberry ice cream
  • 1 jar strawberry jam

Vanilla Glaze and Toppings

  • 2 cups powdered sugar
  • 1 tablespoon vanilla extract
  • 3-6 tablespoons hot milk
  • fun sprinkles, for decoration

Instructions

  1. Prepare the Base: Line a 9×9-inch baking dish with parchment paper. Arrange half of the strawberry Pop-Tarts along the bottom of the dish to form the base layer.
  2. Add the Ice Cream and Jam Layer: In a bowl, slightly soften the vanilla and strawberry ice cream. Layer and gently swirl the vanilla ice cream, strawberry ice cream, and strawberry jam over the Pop-Tarts in the baking dish. Do not overmix — you want visible ribbons of jam and colors. Spread evenly to create a smooth layer.
  3. Add Top Pop-Tart Layer: Place the remaining strawberry Pop-Tarts on top of the ice cream and jam mixture to form the sandwich top layer.
  4. Freeze the Sandwich Base: Freeze the layered Pop-Tart and ice cream sandwich until firm, at least 4 hours or ideally overnight, to ensure it holds together well.
  5. Make the Vanilla Glaze: In a medium bowl, whisk together powdered sugar, vanilla extract, and 2 tablespoons hot milk. Gradually add more milk as needed to thin the glaze to a spreadable consistency.
  6. Glaze and Decorate: Spread the vanilla glaze evenly over the frozen Pop-Tart sandwiches. Let the glaze set for a few minutes, then sprinkle with fun sprinkles for color and texture.
  7. Final Freeze: Return the glazed Pop-Tart sandwiches to the freezer. Freeze for an additional 1–2 hours or overnight until the glaze is firm.
  8. Serve: Remove from the freezer, cut into 9–12 rectangles, and serve immediately, or keep frozen until ready to enjoy.

Notes

  • For best results, use full-fat ice cream for creaminess and better scoopability.
  • You can make your own strawberry pop tarts for a homemade touch or use store-bought for convenience.
  • To soften ice cream faster, leave it out at room temperature for 5-10 minutes before layering.
  • The glaze should be thick but spreadable—adjust with hot milk carefully to avoid it being too runny.
  • Store leftovers in an airtight container in the freezer for up to one week.
