This fresh and flavorful Strawberry Sauce recipe combines whole and pureed strawberries with a touch of lemon juice and sugar, simmered to a perfect consistency. Ideal as a topping for cheesecake, pancakes, or ice cream, this sauce offers a vibrant burst of natural strawberry goodness with a smooth yet chunky texture.

Ingredients

Strawberry Sauce Ingredients

  • 1 pound fresh or frozen strawberries
  • 1 teaspoon cornstarch
  • 2 to 4 tablespoons granulated sugar, to taste
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the berries: Wash and hull the strawberries. Separate them into two groups. Slice one group and set aside for later use. Place the remaining whole strawberries into a blender or food processor and blend until smooth.
  2. Simmer the base: Pour the strawberry purée into a saucepan. Whisk in the cornstarch, 3 tablespoons of sugar, and lemon juice until fully combined. Heat the mixture over medium-high heat, stirring occasionally, until it reaches a boil. Allow it to boil briefly so the cornstarch thickens the sauce.
  3. Add the fresh berries: Remove the saucepan from heat and fold in the sliced strawberries. Taste the sauce and adjust the sweetness with additional sugar or brightness with more lemon juice. If the sauce is too thick, thin it by stirring in a teaspoon of water at a time.
  4. Cool and serve: Let the sauce cool to room temperature; it will thicken further as it cools. Serve over cheesecake, pancakes, or refrigerate in a sealed container for future use.

Notes

  • Use fresh or frozen strawberries depending on availability.
  • Adjust sugar quantity based on the natural sweetness of the berries and personal preference.
  • Stir continuously while heating to prevent burning or sticking.
  • Store refrigerated in an airtight container for up to one week.
  • Sauce consistency can be modified by adjusting the cooking time or adding small amounts of water.
