Deliciously soft and sweet strawberry rolls made with pizza dough, fresh strawberries, and a creamy vanilla cream cheese glaze. Perfect for a breakfast treat or a delightful dessert, these strawberry sweet rolls combine tender dough with a luscious fruit filling and a smooth, sweet topping.

Ingredients

Dough and Filling

  • 16 oz pizza dough (or bread dough)
  • 1 1/3 cups diced strawberries (200g)
  • 3 tbsp coconut oil or butter (36g)
  • 1/3 cup sugar or granulated sugar-free sweetener (70g)
  • 1 tbsp cornstarch (8g) or 2 tbsp flour
  • 1/4 tsp ground cinnamon (optional)

Glaze

  • 4 oz cream cheese or vegan cream cheese
  • 1 1/4 cups confectioner’s sugar or powdered sugar-free sweetener (150g)
  • 1 tbsp milk of choice (or more as needed)
  • 1/2 tsp pure vanilla extract (optional)

Instructions

  1. Prepare the Dough: Let pizza dough come to room temperature to make it easier to roll. Preheat the oven to 350°F (176°C) to ensure it reaches the correct baking temperature.
  2. Roll Out the Dough: On a floured, nonstick surface, roll the dough into a thin rectangle about 1/8 inch thick for even cooking and optimal texture.
  3. Add Fat Layer: Spread softened coconut oil or butter evenly over the surface of the rolled dough to add richness and help the filling adhere.
  4. Mix Strawberry Filling: In a medium bowl, combine the diced strawberries with sugar, cornstarch, and optional cinnamon until well mixed, creating a thick, flavorful filling.
  5. Spread Filling: Evenly distribute the strawberry filling over the prepared dough rectangle, ensuring full coverage.
  6. Roll the Dough: Carefully roll the dough tightly into a long log shape. Use a knife or pizza cutter to slice into thin rolls, accepting some strawberry liquid may escape.
  7. Arrange and Bake: Place the rolls into an 8-inch pan and bake on the center rack of the oven for 35 minutes, or until the rolls are fully cooked, lightly golden, and the filling is bubbling.
  8. Prepare the Glaze: Let cream cheese reach room temperature for easy whipping. Use a stand mixer or hand beaters to whip cream cheese, vanilla extract, and about half the powdered sugar until fluffy.
  9. Finish Glaze: Gradually add remaining powdered sugar, beating until smooth. Thin glaze with additional milk if too thick, adjusting consistency as desired.
  10. Frost Rolls: While the rolls are still warm, spread the cream cheese glaze generously on top so it slightly melts into the rolls, enhancing flavor and moisture.

Notes

  • Using room temperature dough makes rolling easier and prevents tearing.
  • Cornstarch in the filling helps thicken the strawberry juices to avoid a soggy dough.
  • You can substitute vegan cream cheese and dairy-free milk to make this recipe vegan.
  • Optional cinnamon adds a warm spice note that complements strawberries nicely.
  • Serve rolls warm for the best texture and flavor experience.
