Enhanced with red and pink M&Ms and festive sprinkles, this sweet treat is perfect for parties, holidays, or anytime you crave a fun and fruity snack.

Ingredients

Main Ingredients

  • 6 cups rice Chex cereal
  • 12 oz white chocolate chips or melting wafers
  • 1 cup freeze-dried strawberries
  • 1 cup powdered sugar
  • ⅔ cup red or pink/Valentine M&Ms
  • 2 tablespoons red, pink and white sprinkles

Optional Add-ins

  • Mini pretzels
  • Crushed Golden Oreos
  • Mini marshmallows
  • Additional white chocolate chips

Instructions

  1. Add the cereal: Place the 6 cups of rice Chex cereal into a large mixing bowl, ensuring there is enough space to mix later.
  2. Make strawberry powder: Using a food processor, pulse the 1 cup of freeze-dried strawberries until they form a fine powder. Note that tiny seeds may remain unbroken, which is perfectly fine.
  3. Melt white chocolate: Melt the 12 oz of white chocolate chips in a microwave-safe bowl in 20-second increments. Stir thoroughly after each burst, and when mostly melted, continue stirring without microwaving to avoid overheating and ruining the chocolate.
  4. Combine strawberry powder and white chocolate: Stir 2 tablespoons of the strawberry powder into the melted white chocolate until evenly combined, creating a strawberry-flavored coating.
  5. Coat the cereal: Pour the strawberry white chocolate mixture over the Chex cereal. Gently stir to ensure every piece is thoroughly and evenly coated.
  6. Add powdered sugar mixture: In a large resealable plastic bag, combine 1 cup powdered sugar with the remaining strawberry powder. Add the coated cereal mixture to the bag, seal it, and shake well to evenly coat the cereal with the powdered sugar and strawberry powder blend.
  7. Cool and add finishing touches: Transfer the coated Chex mix to a bowl or a parchment-lined cookie sheet to cool completely. Once cooled, fold in the ⅔ cup of Valentine-themed M&Ms and 2 tablespoons of red, pink, and white sprinkles, along with any optional add-ins you desire. Serve and enjoy!

Notes

  • Keep a close watch when melting white chocolate to avoid burning it; stirring often is key.
  • The tiny seeds in freeze-dried strawberries add a natural texture and do not affect the flavor, so no need to worry if they remain.
  • You can customize this mix by adding pretzels or mini marshmallows for extra texture and flavor.
  • Store the finished Strawberry Chex Mix in an airtight container at room temperature for up to one week to maintain freshness.
  • This snack is great for celebrations such as Valentine’s Day, parties, or as a sweet treat anytime.
