Ingredients

Sweet Potato

  • 2 pounds sweet potato (2 to 3 potatoes), cut into ½-inch cubes
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Kosher salt and freshly ground black pepper, to taste

Ground Beef

  • 1 pound lean ground beef
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Kosher salt and freshly ground black pepper, to taste

Sauce

  • ¼ cup mayonnaise
  • 1 ½ tablespoons ketchup
  • 1 tablespoon sweet pickle relish, chopped extra fine
  • ½ tablespoon white vinegar
  • Pinch kosher salt

Toppings

  • 3 cups shredded lettuce
  • 4 Roma tomatoes, deseeded and diced
  • 1 cup shredded cheese
  • ½ cup diced white onion
  • ½ cup diced dill pickles

Instructions

  1. Season the sweet potato: Preheat your oven to 425°F (200°C). In a mixing bowl, toss the cubed sweet potatoes with extra-virgin olive oil, onion powder, garlic powder, paprika, kosher salt, and freshly ground black pepper until evenly coated.
  2. Roast the sweet potato: Spread the seasoned sweet potato cubes in a single layer on a baking sheet, ensuring there is space between each piece. Roast in the preheated oven for 30 to 35 minutes, stirring halfway through to promote even cooking and caramelization.
  3. Brown the beef: While the sweet potatoes roast, heat a skillet over medium heat. Add the ground beef, breaking it up with a spatula as it cooks. Season with onion powder, garlic powder, paprika, kosher salt, and black pepper. Continue cooking until the beef is fully browned and cooked through.
  4. Make the sauce: In a small bowl, combine mayonnaise, ketchup, finely chopped sweet pickle relish, white vinegar, and a pinch of kosher salt. Stir well until all ingredients are fully incorporated to create a tangy, creamy sauce.
  5. Assemble the burger bowls: To serve, place a portion of roasted sweet potatoes into individual bowls. Top with a generous amount of browned ground beef, followed by shredded cheese, shredded lettuce, diced Roma tomatoes, diced dill pickles, and diced white onion. Drizzle the prepared sauce over the top of each bowl before serving.

Notes

  • You can use cheddar or your favorite cheese blend for the shredded cheese.
  • Adjust the seasoning of the ground beef and sweet potatoes to your preference.
  • This recipe is flexible; feel free to add avocado, jalapeños, or substitutions like ground turkey.
  • Make sure to stir the sweet potatoes halfway to ensure they cook evenly and get nice and crispy edges.
  • For a dairy-free version, omit the cheese and substitute mayonnaise with a non-dairy alternative.
