Ingredients

Sweet Potatoes

  • 3 tablespoons taco seasoning

Instructions

  1. Preheat oven: Preheat your oven to 400°F to prepare for roasting the sweet potatoes and baking the casserole.
  2. Roast the sweet potatoes: In a greased 9×13-inch baking dish, toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them evenly, allowing slight overlap. Roast in the oven for 20 to 25 minutes, tossing halfway through, until they are tender and cooked through.
