Ingredients

Chicken Marinade

  • 2 – 2 1/2 pounds boneless, skinless chicken thighs
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey

  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 sprig fresh rosemary (or 1/4 teaspoon dried rosemary)
  • 2 sprigs fresh thyme (or 1/4 teaspoon dried thyme)
  • 2 cloves garlic, minced

  • 2 green onions, thinly sliced

Balsamic Reduction Glaze

  • 1 cup balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, pepper, and minced garlic until well combined. This mixture will infuse the chicken with bright, sweet, and savory flavors.
  2. Marinate the Chicken: Place the chicken thighs into a glass container or a zip-top bag. Pour the marinade over the chicken, making sure each piece is well coated. Add the fresh rosemary and thyme sprigs to the container. Seal and refrigerate for at least 15 minutes or up to 2 hours to allow the flavors to penetrate the meat.
  3. Preheat the Grill: Remove the chicken from the fridge and allow it to come to room temperature briefly. Heat your grill to medium-high heat, approximately 450°F (232°C). Clean and oil the grates to prevent sticking.
  4. Grill the Chicken: Place the marinated chicken thighs on the hot grill. Cook for 5 to 6 minutes on one side without moving to get good sear marks, then flip and cook for another 5 to 6 minutes. The chicken is done when its internal temperature reaches 165°F (74°C). For bone-in, skin-on thighs, increase the cooking time to about 10 minutes per side.
  5. Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes. Resting allows the juices to redistribute throughout the meat, making it more tender and juicy.
  6. Make the Balsamic Reduction: While the chicken is resting, prepare the glaze by combining 1 cup of balsamic vinegar and 1 tablespoon of honey in a small saucepan. Bring to a low boil over medium heat, then reduce to a gentle simmer. Stir frequently and simmer until the liquid reduces by one-third, about 20 to 25 minutes. Remove from heat and let cool; the glaze will thicken further.
  7. Serve: Drizzle the chicken thighs with the prepared balsamic glaze. Optionally, sprinkle thinly sliced green onions over the top for a fresh, mild onion flavor and added color.

Notes

  • You can use bone-in, skin-on chicken thighs instead of boneless; just increase grilling time to about 10 minutes per side.
  • Marinating for longer than 2 hours is not recommended as the acid in the vinegar can start to break down the chicken texture excessively.
  • The balsamic reduction can be stored in the refrigerator for up to 1 week in an airtight container.
  • If you don’t have fresh herbs, dried rosemary and thyme are good substitutes at a quarter of the amount.
  • Make sure to watch the balsamic reduction closely to prevent burning as it thickens.
