Ingredients

Meat

  • 1 lb ground venison (or substitute with ground beef)

Beans

  • 15 oz can mixed chili beans
  • 15 oz can chili beans
  • 15 oz can light red kidney beans
  • 15 oz can dark red kidney beans

Tomatoes

  • 14.5 oz can stewed tomatoes
  • 14.5 oz can diced tomatoes

Seasoning

  • 2 packets (1.25 oz each) chili seasoning mix

Liquids

  • 46 oz bottle V8 Vegetable Juice

Instructions

  1. Brown the Venison: In a large stovetop pan or Dutch oven, heat over medium-high heat. Add the ground venison and cook until browned and fully cooked, breaking it apart as it cooks. Drain any excess fat if necessary.
  2. Add Beans and Tomatoes: Add all the canned beans (mixed chili beans, chili beans, light red kidney beans, and dark red kidney beans) along with the stewed tomatoes and diced tomatoes into the pan with the browned venison. Stir to combine.
  3. Season the Chili: Sprinkle in the two packets of chili seasoning mix. Stir well to evenly distribute the seasoning throughout the mixture.
  4. Pour in V8 Juice: Pour the entire 46 oz bottle of V8 Vegetable Juice into the pan. This will add moisture and a depth of flavor to the chili.
  5. Simmer the Chili: Bring the chili to a gentle boil, then reduce the heat to low and let it simmer uncovered for 30 to 40 minutes. Stir occasionally to prevent sticking and to allow the flavors to meld.
  6. Final Taste and Serve: After simmering, taste the chili and adjust seasoning if necessary, adding salt, pepper, or additional chili seasoning to taste. Serve hot with your favorite toppings or sides such as shredded cheese, sour cream, or cornbread.

Notes

  • You can substitute ground beef if venison is unavailable.
  • Adjust chili seasoning amount based on your spice preference.
  • Simmering time can be extended for thicker chili.
  • Drain beans if you prefer a less soupy chili.
  • Top with cheese, sour cream, or green onions for extra flavor.
