This Tomato and Avocado Bruschetta recipe offers a fresh and flavorful appetizer featuring toasted baguette slices topped with creamy mashed avocado and a vibrant cherry tomato mixture. Quick to prepare and perfect for gatherings, the combination of basil, garlic, and lemon juice brings a bright, zesty taste to the dish.

Ingredients

Bread

  • 1 baguette, cut diagonally into 1-inch slices
  • ¼ cup extra-virgin olive oil, plus more for brushing
  • 1 teaspoon garlic powder

Tomato Mixture

  • 20 ounces cherry tomatoes, halved and seeded
  • 1 tablespoon white balsamic vinegar
  • 3 garlic cloves, minced (divided)

Avocado Mixture

  • 2 avocados, pitted
  • 1 teaspoon lemon juice
  • ¼ cup fresh minced basil (divided)
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper

To Serve

  • Flaky salt, for serving (optional)

Instructions

  1. Preheat the oven: Turn the oven on to broil to prepare for toasting the bread slices.
  2. Prepare and toast the baguette slices: Brush one side of each bread slice with olive oil and sprinkle garlic powder on top. Arrange the slices on a rimmed baking sheet with the oiled sides facing up. Broil for 3-4 minutes until golden brown and crispy—keep a close eye to prevent burning.
  3. Make the tomato topping: In a small bowl, combine ¼ cup olive oil with halved and seeded cherry tomatoes, white balsamic vinegar, and half of the minced garlic. Stir gently and set aside to allow the flavors to meld.
  4. Prepare the avocado spread: In a medium bowl, mash the avocados until smooth. Mix in lemon juice, the remaining minced garlic, half of the fresh minced basil, sea salt, and freshly cracked black pepper. Stir until evenly incorporated.
  5. Assemble the bruschetta: Spread 1-2 tablespoons of the mashed avocado mixture onto each toasted baguette slice. Top each with an even portion of the tomato mixture.
  6. Garnish and serve: Sprinkle the remaining fresh basil on top, and optionally add flaky salt for extra texture and flavor. Serve immediately to enjoy the bruschetta at its freshest.

Notes

  • Watch the bread carefully while broiling to avoid burning as broilers can vary in intensity.
  • Seeding the cherry tomatoes prevents excess liquid and sogginess on the bruschetta.
  • Use ripe avocados for a creamy texture that spreads easily.
  • This recipe is best served fresh but you can prepare tomato and avocado mixtures ahead and assemble just before serving.
  • Flaky salt adds a pleasant crunch and finishing touch but is optional.
